I had a quick question regarding the State exam! Once we have finished the course and passed the final exam, must we take the State exam within the time frame until this class ends, or can we take it once this class deadline ends?

No, you have four years from completion of prerequisite course to complete the exam (you can find this information on the myfloridainfo.com website  http://www.myfloridacfo.com/Division/Agents/Licensure/General/docs/2-20.htm - Have completed or taught a 200 hour course in property and casualty insurance, approved by the department, within four (4) years of application date.). But, I would strongly recommend you take your exam while you still have access to the prerequisite course, that way you can use the unit quizzes as a study guide.
